Mix together sherry, soy sauce and garlic in bowl. Add pork and mix well. Cover bowl, marinate for at least 30 minutes. Drain pork, reserving the marinade. Heat oil in wok, add pork and brown on all sides. Cook for further 5 minutes, stirring. Add watercress, marinade and cook until watercress has wilted. Season and serve with rice.
